Corked Wine
Is Your Wine Corked
Here is a video quicky on checking wine before you purchase.
Turns out this wine was corked even tough it seemed OK from a simple check. It was not “badly” corked but still… it was compromised and a bit off so it was returned. You saw the cork in the video. I cut the cork in half and indeed it was stained in several cracks that ran through the body of the cork.
A corked wine has been exposed to a cork infected with a fungus that produces 2,4,6-trichloroanisole or TCA. The chemical gives it the off smell. Like wet dog, wet cardboard or newspaper.
Up to 4 or 5% of all bottles of wine are corked. This bottle was Frei Brothers Reserve Syrah Russian River Valley 2006 Northern Sonoma. It’s an excellent wine we have had before and I was opening this one to do a review.

Turning the label is not fool proof as you saw. Sometimes you will need to grip the top label firmly to turn it & thats fine. However if the neck wrap starts to tear from being stuck to the neck you may want to try another bottle. A cork pushed up even a little bit is typically a sure sign.
A bottle that is not full to near the bottom of the neck/cork may be a sign of having been overheated during transport leading to a corked or cooked bottle.

Coconut Shrimp Recipe
with Apricot Pineapple Dipping Sauce – Spinach Salad – Rice Pilaf with Pine Nuts
Pair with Covey Run Pinot Grigio 2006 (review)
Coconut Shrimp Ingredients
1 – 25 to 30 count bag of frozen peed and deveined Jumbo Shrimp thawed
2 cups – Panko Japanese Bread Crumbs
¼ cup – Pineapple/Apricot Horseradish Sauce
½ cup – Pineapple Preserves
1 cup – Shredded Sweet Coconut
¼ cup – Flour
¼ cup – Canola Oil
¼ teaspoon – Allspice
¼ teaspoon Kosher Salt
2 – Large Eggs
Rice Pilaf Ingredients
1 bag Uncle Ben’s 90sec microwaveable Rice Pilaf
2 tablespoons – Pine Nuts
Deluxe Spinach Salad Ingredients
10oz Bag Washed & Rinsed Baby Spinach
3 – Boiled Eggs
2 – Plum Tomatoes
3 – tablespoons real crumbled/shredded bacon bits (on salad dressing aisle).
½ cup – Kraft Caesar Vinaigrette with Parmesan dressing & marinade
1 cup – Herb Seasoned Salad Croutons
Prepare Salad
Thinly slice 2 tomatoes
Coarsely chop 2 boiled eggs
(set above aside)
Finely chop one boiled egg
Put finely chopped egg into bottom of salad bowl
Add spinach (pinch off stems if you want)
When Ready to Serve… add dressing and toss. Add bacon crumbles layered over top followed by coarse chopped eggs and sliced tomatoes. Top with salad croutons.
Serve
Prepare Coconut Shrimp
Add two large eggs to bowl and whisk
Add Panko Bread Crumbs, Coconut, Allspice & Kosher Salt to shallow bowl & mix well
Add Flour to medium bowl.
Coat shrimp one or two at a time in flour – dip in egg – dredge in bread crumb mixture coating evenly and put in shallow bowl.
Warm skillet or deep frying pan for 2 minutes. Add ¼ cup Canola oil.
Set to medium or medium high heat and add shrimp.
Cook 4 minutes per side until golden brown & done.
Place shrimp on plate covered with a layer of paper towels.
Prepare Rice Pilaf
Follow direction on package to make Uncle Bens rice pilaf. Put in serving bowl add pine nuts, mix well.
Horseradish Sauce
Add ¼ cup horseradish sauce to microwaveable bowl.
Add ½ cup pineapple preserves mix well.
When ready to serve place in microwave & heat 11/2 to 2 minutes. Stir well and serve over shrimp or on the side as a dipping sauce.
